Chilled Strawberry Soup
- 2 cups hulled and sliced fresh or (thawed) frozen strawberries (NOT in sugary syrup)
- 1 cup orange juice
- 1 cup plain greek yogurt
- 1/2 teaspoon vanilla extract
- mint sprig, optional but tasty
In a blender, combine all the ingredients, except mint. Ladle the soup into bowls and top with a dollop of more greek yogurt. Garnish with mint, if desired.
