I haven't met a person yet, who doesn't like french fries! OH those golden delicious bits of fried potato! BUT you and I both know that, fried means, saturated fat, loads of calories, and well, just plain not good for you to be eating all the time! So in an effort to keep my french fry obssession under control, in between my jaunts for the "real thing" I make BAKED french fries, whether with my favorite Idaho potato or a golden sweet potato, these fries are going to make you swoon, and not even miss, "the real thing".
Sweet potato fries (and if you prefer a regular potato, that may be substituted, too!)
*did you know sweet potatoes are full of fiber, vitamin A, Iron and Vitamin C! Now that IS SWEET!*
2 sweet potatoes
sea salt
2 Tbs olive oil
Rinse sweet potatoes and cut into thin strips (or thick if you prefer "steak cut" french fries)
Toss in bowl with olive oil and sea salt. Place a cooling rack on top of a baking sheet (for even cooking) and place french fries evenly across cooling rack. Place into oven at 450 for 20 minutes, or until golden brown, turning once over during baking. ENJOY!
