Yankee Girl's Guide to Southern Cooking~"FRIED" GREEN TOMATOES

So I am impatiently stalking my garden, wondering when those beautiful tomatoes will ripen when I had this thought...... hmmmmm fried green tomato BLT's! Yes!! This will not only satisfy my BLT craving, but I won't have to wait for those darn tomatoes to turn red. Wait! Roadblock! How do I "B-Fit" those tomatoes so my sandwich doesn't end up being a calorie gut buster?! Well here ya go......

Oven "fried" green tomatoes

  • 4 to 6 green tomatoes, cut in 1/4-inch thick slices
  • 1/2 cup egg whites, beaten
  •  1 cup almond milk (or regular milk, whatever you have on hand)
  •  1 1/2 cup flour
  • 1 1/2 cup panko breadcrumbs
  • salt and pepper
Sprinkle tomato slices with salt and pepper on both sides.  In 3 separate bowls, place flour, milk and panko breadcrumbs. Dip each slice of green tomato into flour. then egg, then breadcrumbs.  Arrange tomatoes onto a cookie cooling rack that is sprayed with cooking spray to avoid sticking. Once all tomatoes are arranged, place cooling rack on top of a baking sheet to catch any drips or crumbs, and lightly spray tomatoes with cooking spray. Place entire baking sheet, covered in tomatoes,into the oven and bake uncovered on 400 for 20 minutes,  or until golden brown on each side, turning halfway through cooking time. You can thank me later when your mouth is done watering from all this deliciousness!

Try these substitutions:
turkey bacon
vegannaise (mayonnaise made without eggs! great vegan alternative for less cholesterol or if you have any egg allergies in the family)
don't forget that multigrain bread the fiber will keep you fuller, longer.
and measure your ingredients.......2 slices of bacon is a serving, 2 tbs of mayonnaise is a serving, etc
